Forged from Japanese stainless cladded Ginsan steel, these knives focus on high performance and ease of use. Ginsan is a great steel that have a good balance of properties, also fairly easy to sharpen, often compared to carbon steels. Xin Guo's excellent thin convex grind also performs great in range of ingredients.
